Khooba Roti is a Rajasthani bread made by pinching the dough in a manner that its top surface is textured. These little pockets is where the ghee settles, making the roti all the more delicious.
2 cup wheat flour 1/2 teaspoon cumin seeds/jeera 2 tablespoon clarified butter/ ghee Salt as required Water as required
Take flour, cumin seeds and ghee, mix and make tight dough using water.
Cover the dough, let it rest for 30 minutes. Once it is set pull out a chunk and make small ball.
Now flattened these balls with a rolling pin and pierce some holes into it using a knife. Heat the pan, place your roti over.
While the roti is getting cooked, start pinching to create some depressions on surface. Flip the roti, cook on other side.
