Rabri is a milk-based dessert that is made on several celebratory occasions. Here is the recipe.
5 cups milk (full cream), 1/2 cup sugar, 4-5 green cardamoms, 12-15 almonds (shredded & blanched), 2 tbsp pistachios (shredded & blanched), silver leaves to decorate
Boil the milk in a wide, heavy-based pan. Add the sugar and cardamom and simmer over low heat.
Do not stir too often. After a layer of cream is formed, push it towards the centre from the sides. Repeat the process till 1/3 of milk is left.
Remove from heat. When cool, transfer to a serving dish. Garnish with silver leaves and nuts. Enjoy.
