Kosamabri is a traditional South Indian salad recipe made with cucumber and pulses. It is seasoned with mustard seeds and a few other spices to elevate the flavour. Here is a quick recipe for this summer delight that you must try at home.
1 grated carrot ½ cup split moong beans 1 tablespoon lemon juice 1 teaspoon mustard seeds 1 medium cucumber 1 tablespoon oil 6-8 curry leaves ½ cup grated coconut A pinch of asafoetida 2-3 green chillies Fresh coriander leaves Salt to taste
Rinse soaked split moong beans under water and add them to a bowl. You don’t have to boil them or cook them in any way.
Add chopped onion, grated carrot, chopped green chillies, chopped cucumber, and grated coconut to the mixture. Combine everything.
Heat oil in a small pan and prepare the tempering. Add a pinch of hing and curry leaves to the oil.
Pour the tempering over kosambari and mix the ingredients again.
Add lemon juice on the top and salt to taste. After tossing ingredients together, taste it, and adjust the flavours.
Enjoy the fresh South Indian salad as is or serve it as a side dish along with mains.
