Achar or pickle is a quintessential accompaniment in every Indian household. While there are a lot many types of achar you can make with lemons, this Punjabi recipe for meetha nimbu achar is definitely worth trying.
Lemons - 8-10 Sugar - 1 cup Black salt - 1 tablespoon Red chilli powder - ½ tablespoon Garam masala - 1 teaspoon Ginger powder - ½ teaspoon Ajwain - ½ teaspoon Pinch of salt
Start by rinsing the lemons and patting them till they are completely dry.
Make the masala by mixing sugar, black salt, red chilli powder, garam masala, ginger powder, ajwain, and salt.
Cut the lemon into small pieces and remove the seeds.
Mix the lemon pieces with the masala, transfer them into an air-tight container, and keep them in the Sun for about a week.
Add a little more sugar or jaggery after the week and let the pickle sit in sunlight for some more days.
You can enjoy the pickle after a few weeks, and the taste will get even better after some more time has passed.
