Aloo Wadiyan is a classic Punjabi dish that is both comforting and delicious. The rich flavours of the spices cooked with the potatoes and urad dal vadis create a truly satisfying meal. Here’s how to make the dish at home.
2 potatoes 1 cup urad dal vadis 2 onions, chopped 3 tomatoes, pureed 2 green chillies, slit 1 inch ginger, grated 3 cloves garlic, minced 1 teaspoon cumin seeds 1 teaspoon coriander powder 1/2 teaspoon turmeric powder 1 teaspoon red chilli powder 1 teaspoon garam masala 1 tablespoon kasoori methi 2 tablespoons ghee Salt to taste Coriander leaves for garnish
Heat some oil and deep-fry ural dal vadis till crispy. Set aside.
Take another pan and saute cumin seeds, ginger, garlic, and green chillies. Add chopped onions.
Add tomato puree, coriander powder, turmeric powder, red chilli powder, and garam masala.
Pour in some water, boiled potatoes, and fried dal vadis. Let the gravy simmer.
Stir in salt and allow the flavours to blend. Garnish with kasoori methi and coriander, and enjoy.
