How To Make Portuguese Pastel De Nata At Home

Recreate the magic of these world-famous egg custard tarts in the comfort of your own home this Christmas. This simple recipe is perfect for even beginner bakers to follow.

Ingredients

1 sheet of puff pastry (store-bought or homemade) 2 cups whole milk 1 cinnamon stick Peel of 1 lemon 6 egg yolks 1 cup granulated sugar 2 tablespoons all-purpose flour Powdered sugar for dusting

Step 1

Preheat your oven to 220°C and roll out the puff pastry sheet on a lightly floured surface. 

Step 2

Cut it into circles that fit the cups of a muffin tin. Place each square into the cups, pressing down gently to form a pastry shell.

Step 3

In a saucepan, heat the milk with the cinnamon stick and lemon peel over medium heat until it almost reaches boiling.  Let it cool slightly then strain. 

Step 4

In a separate bowl, whisk together the egg yolks, sugar, and flour until well combined. Slowly pour the warm milk into the egg mixture, whisking continuously.

Step 5

Pour the mixture back into the saucepan and cook over medium heat, stirring constantly until it thickens to a custard consistency.

Step 6

Once the custard is ready, spoon it into the prepared pastry shells, filling each about two-thirds full.

Step 7

Bake in the preheated oven for about 15-20 minutes or until the pastry is golden brown and the custard has a slightly caramelised top.

Step 8

Let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Dust the cooled pastries with cinnamon sugar before serving.
