Golden brown, super crunchy and perfectly seasoned. These oven-baked potato wedges are the perfect side dish for any meal. You can transform the humble potato into the tastiest wedges with just a splash of olive oil and peri-peri spice mix.
For the potatoes: 1 kg potatoes, Maris Piper, cut into wedges 4 tbsps olive oil sea salt and freshly ground black pepper For the peri peri mix: 2 tsp smoked paprika 2 tsp garlic granules ¼ tsp cayenne pepper
Preheat oven to 200℃/fan 180℃.
Boil potatoes in salted water for 2 minutes. Drain and let steam dry.
Mix peri-peri spices in a small bowl. Toss potatoes with olive oil, peri peri spices, salt, and pepper.
Arrange wedges on a baking tray in a single layer. Bake for 20 minutes, then toss.
Bake for another 20-30 minutes until golden and crisp.
Season with salt and serve immediately.
