By Sushmita Sengupta

India’s heart lies in paneer. Also known as cottage cheese paneer is used in various curries, snacks, desserts and more. Here’s how to make it at home.

Ingredients

-5 Cup whole Milk -1 tbsp white vinegar -1 tbsp fresh lemon juice

Step 1

In a small bowl, add lemon juice, white vinegar and about ¼ cup water. Mix and set aside.

Step 2

Now take a deep saucepan, pour the full-fat whole milk and heat it for approx. 10 minutes over medium heat. Do not let the milk boil.

Step 3

Add the lemon vinegar mixture to the milk. Stir until milk coagulates. Do not strain the coagulated milk.

Step 4

Boil for another 3-4 minutes, or until the milk is clean and watery. Turn off the heat. Rest for another 5 minutes.

Step 5

Filter the cottage cheese/curd through a cheesecloth. Gather fabric from all sides. Squeeze as much water as possible out before tying the knot.

Step 6

Place a heavy utensil or weight on the cheese wrapped in cheesecloth, leave for 3-4 hours to filter all the remaining water.  Remove the cloth, enjoy the paneer.
