How To Make Old-Delhi Style Chicken Changezi

You can never get over the classic Purani Dilli style Changezi Chicken, complete with robust spices, and paired with roomali roti or rice. 

Ingredients

½ kg chicken (washed and cleaned) 3 tbsp curd 2 onions (sliced) 5-7 cashews ½ cup tomato puree 1 tbsp coriander leaves ¼ cup oil 1 tsp turmeric 1 tsp red chilli powder 1 tsp coriander powder Salt, as per taste

Marinate the cleaned chicken for 30 minutes with 1 tbsp curd, and half tsp each of turmeric, red chilli powder, coriander powder and salt. Mix well. 

Heat oil in a pan and saute onion until brown and crispy. Shallow fry cashews separately. In the same oil, shallow fry chicken pieces. Take out once 80% cooked.  

Now blend fried cashews, onions and a dash of salt into a fine paste. 

Use the leftover oil to cook tomato puree and onion paste together. Cook until it starts to leave oil. 

Now add half tsp each of the spices and 2 tbsp curd. Mix the masala well for about 7 minutes. 

Add the fried chicken pieces to the masala followed by ¼ cup of water and cook the chicken well. 

Garnish with coriander leaves and serve hot with your choice of bread.
