How To Make Meethe Chawal For Vasant Panchami

Basant Panchami falls on 25th January this year, in India, it marks the oncoming of Spring for many communities. People wear yellow clothes and also cook yellow-tinted foods like ‘Meethe Chawal’.  

Ingredients

A few saffron strands 1.25 cup Long grained rice 2 tbsp Ghee 25 mm stick Cinnamon 2 Cloves 4 Cardamoms 1 tbsp Milk 1 cup sugar 

Step 1

Heat pan, dry roast saffron for 10 seconds. Add milk and keep aside. Clean, wash, soak and drain rice for 10 minutes and keep aside. 

Step 2

Bring water to boil and in a separate pressure cooker heat ghee, cinnamon, cloves, cardamom, and rice. Sautee for 5 minutes.

Step 3

Add saffron mixture, hot water, sugar in pressure cooker and cook for 2 whistles. 

Step 4

Allow steam to escape before opening. Serve the rice ho, garnished with mixed nuts.
