Made with rice and fresh coconut, appam is a gift of Kerala cuisine that can be paired with curries, chutneys and more. Here is an easy recipe to make it at home.

1 cup rice, soaked ½ cup fresh coconut 1/2 cup cooked rice 3 breads Salt to taste ½ tsp oil

Soak the breads in one cup of water for 2 minutes. Squeeze it out of water and grind with rice to make a smooth paste. Then transfer into a bowl.

Grind the cooked rice, coconut and bread with a little water to make a fine paste. Combine both the paste and stir well. Cover the bowl and let it ferment overnight.

The next day heat an appam kadai. Wipe it with an oiled cloth. Add salt to the batter and mix well. Pour a ladle of batter in the appam kadai and cook well.

Cover the kadai and cook till the edges become red and crisp. Drizzle some oil around the edges of appam and take it off the heat. Serve hot.
