Idli is one of the best South Indian breakfast options. Even though it usually needs baking soda for fluffier idlis, here’s how you can make the fermentation process better.

Ingredients

1 cup rice 1/4 cup urad dal 1 cup water Salt to taste

Step 1

Rinse rice and urad dal. Soak them separately overnight.

Step 2

Drain the water and grind them together with salt till you get a smooth batter.

Step 3

Let the batter ferment overnight for fluffier idlis.

Step 4

Pour the fermented batter into moulds and steam for 10-15 minutes.

Step 5

Transfer the fluffy idlis to a plate and serve with sambar and coconut chutney.
