Whether it is the flavour, consistency or quality of your condiment, homemade mayonnaise could easily trump the best quality store-bought ones. Relish this deliciously creamy condiment in sandwiches, burgers, wraps, dressings or even use as a dip for fries.
1 egg, at room temperature 1 cup olive oil 1 tablespoon ground mustard 1 teaspoon salt 1 tablespoon sugar Juice of 1 lemon 1 teaspoon vinegar
Add the egg, mustard, salt, sugar and lemon juice to a blender and grind for a few seconds.
Pour in one portion of the olive oil and blend using a low setting, not causing the mixture to split.
Continue to drizzle in the olive oil in parts and blend using short spins, until the mixture begins to thicken.
Add the remaining olive oil and vinegar right before blending it thoroughly one last time and transfer to a container.
Refrigerate and use for up to 2 weeks.
