Take a cup of quinoa and boil it for 15 minutes in 2 cups of water. Do not cover the quinoa with any lid while cooking. Once done, drain it and keep it aside.
Take vegetables of your choice like carrots, capsicum, mushrooms, onion and beans and chop them evenly to maintain the texture.
Heat up olive oil in a pan and add your vegetables one by one. If you are adding onions, they must go first, followed by other veggies.
Add salt and pepper seasoning to your vegetables. Cook on medium flame for 5-6 minutes till the veggies are cooked, but still have a crunch.
In a mixing bowl, add the quinoa, sauteed veggies and squeeze half a lemon in it. If you like your food spicy, sprinkle chilli flakes. Mix it well and your quinoa salad is ready.
