The Gujarati snack dhokla has to be everyone’s favourite. If you are craving the soft and songy dhokla, you don’t need to wait to get a steamer. Here’s how you can make dhokla in a pressure cooker.
For The Batter: 1.5 cups besan 3/4 cup water 1/2 tsp salt 1/4 tsp sugar 1/4 tsp turmeric powder 1 tsp baking soda 1 tsp oil For The Tadka: 2 tsp oil 1/2 tbsp mustard seeds 3-4 green chillies 12-14 curry leaves 1 cup water 1/2 tsp salt 4-5 tsp sugar Juice of 1/2 lemon
Whisk besan, water, salt, sugar, and turmeric powder till you get a smooth batter. Let it rest for 10 minutes.
Add 1 cup water to your pressure cooker. Place a metal stand in the cooker to elevate the surface.
When the water is hot, add baking soda to the batter. Pour the batter into a greased tray and place it in the cooker.
Close the lid without the whistle and steam for about 15 minutes.
Heat some oil, add mustard seeds, curry leaves, and chopped green chillies, and saute them.
Pour 1 cup of water and add salt, sugar, and lemon juice. Let the tadka simmer.
Cut the cooked dhokla into pieces and pour the tadka, coating all the pieces and serve.
