Beetroot pancakes are a fun and healthy way to sneak veggies into your kids' meals. Brightly coloured and delicious, these pancakes are perfect for breakfast or a wholesome snack.
Boil or steam one small beetroot until soft, then blend it into a smooth puree.
In a bowl, mix 1 cup of whole wheat flour, 1 teaspoon of baking powder, and a pinch of salt.
Add the beetroot puree, 1 egg, 1 cup of milk, and a little honey to the dry ingredients. Stir until the batter is smooth.
Heat a non-stick pan and pour small amounts of batter. Cook on medium heat until bubbles form, then flip and cook the other side.
Serve with a drizzle of honey or a dollop of yoghurt. Enjoy!
