Pav bhaji is a street food that everyone loves and the secret behind it's unique taste is a blend of spices that gives it an extra kick. If you're tired of store-gought masalas and want to make your own pav bhaji masala mix, here's how to do it.
7 to 8 Dry Red Chilies 10 Kashmiri Red Chilies 1/4 cup Coriander Seeds 10 to 12 Cloves 2 tablespoons Cumin Seeds 1.5 tablespoons Fennel Seeds 5 cm piece of Cinnamon 4 Black Cardamom 1 tablespoon Turmeric Powder 2 tablespoons Amchoor Powder
Place all the whole spices into a sturdy pan and roast them over low heat for 7 to 10 minutes.
Add turmeric and amchoor powder, and mix for 30 seconds.
Transfer the mixture to a plate and allow it to cool. Once cooled, grind the mixture in a blender.
Store the resulting spice blend in an airtight container. It will keep well for over a month at room temperature, and for more than 6 months when stored in the refrigerator.
