Step 1

Choose plump, light-brown coriander seeds for the best flavour. 

Step 2

Roast the coriander seeds in a pan over medium heat until they turn slightly darker and release a fragrant aroma. This helps intensify the flavour. 

Step 3

Let the roasted seeds cool completely before grinding to prevent moisture build-up. 

Step 4

Grind the cooled seeds into a fine powder using a spice grinder or mortar and pestle. 

Step 5

Transfer the powder to an airtight container and store in a cool, dry place for up to six months.
