Egg Bhurji or anda bhurji is an Indian scrambled egg dish and a popular street food. It is a delicious protein-filled dish ideal for breakfast, lunch or dinner and pairs perfectly with bread and parathas.
4 eggs 1 chopped onion 1 chopped tomato 1-2 green chillies 2 tsp ginger-garlic paste ¼ tsp turmeric powder ½ tsp red chili powder ½ tsp garam masala ½ tsp cumin seeds 2 tbsp oil Salt to taste Chopped Coriander leaves
Break and beat eggs in a bowl, add a pinch of salt and set it aside.
Heat oil in a pan, add cumin seeds and wait until they splutter. Then add onions, green chilies, and ginger-garlic paste and sauté until onions soften.
Add the tomatoes, red chilli powder, and garam masala. Cook until the tomatoes turn mushy.
Pour the beaten eggs into the pan and scramble gently on low heat until they turn soft.
Garnish with chopped coriander leaves and serve with bread or roti.
