Quick and healthy dry fruit chia pudding. Perfect for breakfast or snack. Chia seeds and dry fruits are packed with fibre and antioxidants. A healthy make-ahead treat to satisfy your sweet tooth. Here is how to make this pudding:
2 tbsp chia seeds 1 cup milk (or almond milk) 1 tbsp honey or maple syrup 2 tbsp mixed dry fruits (almonds, cashews and pistachios), chopped ½ tbsp raisins ½ tsp vanilla extract ¼ tsp cardamom powder 1 tbsp fresh fruits for garnish
In a bowl, mix chia seeds and milk. Stir well to avoid lumps.
Add honey or maple syrup and vanilla extract if using. Mix well.
Cover and refrigerate for at least 10 minutes. Let the chia seeds expand and thicken.
Add chopped dry fruits and raisins once the pudding has set a bit. Mix well.
If using cardamom powder, sprinkle on top.
Refrigerate for another 20-30 minutes or till the pudding is set. Garnish with fresh fruits before serving.
