Tteokbokki is an iconic Korean street food. Chewy rice cakes smothered in a spicy sweet sauce. This is delicious, comforting and surprisingly easy to make at home. With these few ingredients you can have this Korean favourite in your kitchen.

Ingredients

200g Korean rice cakes 1 tbsp gochujang (Korean red chili paste) 1 tbsp soy sauce 1 tbsp sugar ½ tsp red chili powder 1 tsp sesame oil 2 cloves garlic 1 small onion 1 spring onion 2 cups water or vegetable stock 1 tbsp sesame seeds for garnish

Step 1

If using refrigerated or frozen rice cakes, soak them in warm water for 10 minutes to soften.

Step 2

In a bowl, mix gochujang, soy sauce, sugar, red chili powder and sesame oil to form a smooth paste.

Step 3

In a pan, heat a little oil and sauté the garlic and onions until soft and fragrant.

Step 4

Pour in the water or vegetable stock and stir in the sauce mixture. Add the soaked rice cakes and stir well.

Step 5

Let it simmer for 10-12 minutes until the sauce thickens and coats the rice cakes evenly. Stir occasionally to avoid sticking.

Step 6

Garnish with chopped spring onions and sesame seeds. Serve hot and enjoy!
