1 cup dried soybeans 4 cups water (for soaking) 4 cups water (for blending) 2 tablespoons lemon juice or vinegar 1/2 teaspoon nigari (coagulant) or gypsum Water for diluting nigari (about 1/2 cup)

Blender Cheesecloth or muslin cloth Tofu mould or any rectangular container with holes Heavy objects for pressing (e.g., cans, weights)

Firstly, you must soak the soybeans in 4 cups of water overnight or for at least 8 hours.

Then, add 4 cups of water and blend it.

Strain the soy milk and extract as much soy milk as possible with cheesecloth or muslin cloth.

You need to dissolve 1/2 teaspoon of nigari (or gypsum) in about 1/2 cup water.

Bring the soy milk to around 180°F (82°C), but avoid boiling and add the coagulant. Stir and let it sit.

Cut and press the curds in the mould and press tofu with weights.
