This grapefruit smoothie blends red grapefruit, pineapple, fresh ginger, and Greek yoghurt for a refreshing, healthy drink. It’s perfect for boosting your metabolism while filling your stomach!
1 red grapefruit 2 cups fresh pineapple chunks ⅓ cup full-fat Greek yoghurt 1 tbsp coconut oil ¼ inch fresh ginger Optional toppings: grapefruit segments, berries, granola
Segment the grapefruit over a bowl to catch the juice. Set aside 2-3 segments for topping.
Place the grapefruit segments, juice, fresh pineapple, Greek yoghurt, coconut oil, and ginger in a blender.
Blend all the ingredients on high speed until smooth.
If the smoothie is too thick, add a little non-dairy milk and blend again.
Pour the smoothie into two glasses or bowls. Top with grapefruit segments, berries, or granola, and enjoy!
