Bollywood actress Deepika Padukone is a fitness icon for many, and while you may think she survives on plain soups and salads, but actually her heart lies in a hot bowl of Rasam Rice.
Rasam is a punchy, South Indian soup often made with ingredients such as Tamarind, peppers, chillies and lemon. It can be consumed as is, or paired with rice. Here’s how to make it.
Pepper-1tbsp Jeera-1/2tbsp Garlic flakes- 5 Coriander seeds-1tsp Curry leaves- few Tamarind- small lemon size Turmeric powder-1/2tsp Coriander leaves Salt to taste
Start with soaking tamarind in water, keep it aside until tamarins are well-soaked and soft.
Take a mixer and add pepper, coriander seeds, cumin and garlic. Add few curry leaves and grind to coarse paste. Go back to tamarind, extract tamarind juice, keep it aside.
Heat oil in a pan, add mustard seeds, let the mustard crackle. Then add hing and ground masala. Sautee it lightly. Pour the tamarind juice and tamarind powder. Dilute with water, add salt.
Add chopped coriander leaves, wait for it to come to boil. Cook on low flame. Switch off when Rasam is cooked, garnish with coriander leaves serve with hot rice.
