Craving a crispy, savoury snack? Kanda Bhaji, a popular onion fritter from Maharashtra, is perfect for rainy days or evening tea, offering a burst of flavour and crunch.
Thinly slice 2 medium onions and separate the rings. This ensures even frying.
In a bowl, mix gram flour (besan), salt, turmeric, red chilli powder, and ajwain. Add water gradually to create a thick, smooth batter.
Add the sliced onions to the batter, coating them evenly. Let it rest for 10 minutes to absorb the spices.
Heat oil in a pan. Drop spoonfuls of the onion-batter mixture into the oil and fry on medium heat until crispy and golden.
Remove the bhaji from the oil, drain on paper towels, and serve hot with chutney or ketchup.
