Make crispy fish fingers at home with this easy recipe. Perfect for a quick meal or snack, these fish fingers are golden, crunchy on the outside, and tender inside. No deep-frying is needed.
600g fish fillets, patted dry Oil spray (olive or any plain) 75g panko breadcrumbs 25g parmesan 2 teaspoons paprika (optional) 1/2 teaspoon salt and pepper, each 1 egg 1 tablespoon mayonnaise 2 tablespoons flour 1/4 teaspoon salt and pepper, each
Preheat the oven to 220°C (fan 200°C). Spray a baking tray with oil.
Toast the breadcrumbs in the oven for 4 minutes, until golden.
Mix the breadcrumbs with parmesan, paprika, salt, and pepper.
In a separate bowl, whisk the egg, mayonnaise, flour, salt, and pepper. Cut fish fillets into strips about 1.5 x 11 cm.
Coat the fish strips in the batter and then press into the breadcrumb mixture.
Place the coated fish strips on the tray, spray with oil, and bake for 13 minutes until crispy.
