You must have bought coconut cookies from a store but making them at home is simple.
1 cup all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon salt ½ cup unsalted butter 1/2 cup sugar 1 large egg 1 tsp. vanilla extract 1 cup shredded coconut 1-2 tablespoons milk
Preheat your oven to 175°C. Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, beat the butter and sugar together. Beat in the egg and vanilla extract until well combined. This should take 2–3 minutes with an electric mixer.
Gradually add the dry ingredient mixture to the wet ingredients. Fold in the shredded coconut until it is evenly distributed.
Roll tablespoon-sized portions of dough into balls and place them on the prepared baking sheet. Flatten each ball slightly with your fingers or the back of a fork.
Bake in the preheated oven for 12–15 minutes
Allow the biscuits to cool for a bit and serve with tea or coffee.
