Bohça Kebab is a Turkish classic in which tender meat, vegetables, and herbs are wrapped in thin dough to create a delicious and juicy parcel. It is the best way to experience Turkish cuisine, all the flavours in one elegant package.
250g boneless chicken 1 tbsp olive oil 1 onion 1 carrot ½ cup green peas Salt and pepper to taste 1 tsp paprika 2 tbsp fresh parsley 4 sheets phyllo pastry 2 tbsp melted butter 2 tbsp yoghurt
Heat olive oil in a pan, sauté onions until softened.
Add chopped meat and cook until browned.
Add diced carrot and peas, and cook for 5-7 minutes; season with salt, pepper and paprika.
Add fresh parsley, remove from heat and let the filling cool.
Preheat the oven to 180°C, place a phyllo sheet on a flat surface, and brush with melted butter.
Add a spoonful of filling in the middle and fold over the edges to form a parcel.
Bake for 20-25 minutes until golden brown. Serve hot with a dollop of yoghurt.
