A Spanish omelette is a simple, yet flavourful dish made with just five key ingredients. It’s a perfect balance of potatoes, onions, eggs, and herbs, creating a hearty and satisfying meal.
500g new potatoes 1 white onion, chopped 150ml extra-virgin olive oil 3 tbsp chopped flat-leaf parsley 6 eggs Salt and pepper (to taste)
Slice the potatoes and chop the onion into small pieces for easy cooking.
Heat olive oil in a pan, add the potatoes and onion, and cook for 30 minutes. Strain the potatoes and onion, and reserve the oil for later use.
Beat the eggs and mix with parsley, salt, and pepper. Add to the cooked potatoes.
Pour the mixture into a pan and shape the omelette with a spatula.
Invert the omelette onto a plate, slide back into the pan, and cook for a few more minutes.
