Simple boiled potatoes are seasoned with seasonings, onions, and herbs to make aloo masala. Typically, it is prepared as a stuffing for a dosa, chappati, or paratha.
1 ½ cups diced potatoes ½ cup onion ½ tbsp ginger ½ salt Mustard and cumin seeds Curry leaves Chana dal and urad dal Turmeric and hing
Bring water to a boil before adding potatoes and cook until soft. Secondly, add water and cook on moderate flame for 3 whistles.
Cook until mushy. Next, in a frying pan, add the mustard and cumin when the oil has heated.
Add chana dal and urad dal to aloo masala. Next, add hing to give it a rich scent and crisp texture. Add ginger and cook for 1 minute, then boil dal until it’s mushy and ensure all the water has evaporated.
Curry leaves, onions, and green chillies should be added to sauté onions until translucent, then add potatoes, turmeric, and salt.
Mash aloo masala with a spatula and add a tiny amount of water. Taste and add salt if necessary. Garnish with coriander leaves and enjoy.
