The key to making the perfect healthy fish curry is without oil. A non-guilty way to eat this delicious delicacy. Let the spices infuse the fish with flavour. This easy, oil-free recipe allows you to enjoy an Indian restaurant favourite at home.
453 g of white fish fillets (such as cod or halibut) 1 onion 3 cloves of garlic 1 teaspoon grated ginger 1 teaspoon of turmeric 1 teaspoon of cumin 1 teaspoon of coriander 1 teaspoon powder 1 tomato 1 cup of water 1 teaspoon salt 1 teaspoon of lemon juice 2 teaspoons of fresh cilantro
In a large pan, cook the onions on medium heat until they turn soft. After that, add garlic and ginger and cook for 1 minute. Later, add spices and stir well. Cook for 2 minutes.
Once they are cooked, add the cubed fish and mix it well. Cook for 2-3 minutes.
Pour in the tomatoes with their juice and the water or broth. Bring to a simmer.
Cover and cook for 10 minutes until the fish is cooked through and flakes easily with a fork. Remove from heat and stir in salt, lemon juice and cilantro.
Serve hot over basmati rice or with naan bread on the side. Enjoy this flavourful, healthy fish curry!
