Fermentation is a centuries-old method to preserve and enhance the taste of food. You can ferment your leftover rice to make it nutritious and easier to digest as it increases its probiotic content.
Leftover cooked rice Water Curd or buttermilk Salt Glass container with a lid
Before starting, ensure that the leftover rice is not fully cooked or mushy.
If the rice was cooked in salty water, rinse it with some water.
Take a glass container and soak the rice in water till all of the grains are under the water.
To speed up the fermentation process, add some curd or buttermilk.
Add a pinch of salt to the glass container to enhance the taste.
Cover the container with a lid and place it in a warm spot for about 12 to 24 hours.
When you see little bubbles forming on the surface, that’s your cue to check if the fermentation is completed.
Once you’re satisfied with the taste, you can refrigerate the fermented rice and use it for up to a week.
