How About Some Lemon Rice For Lunch

Looking for quick and delicious lunch? Make lemon rice packed with aromatic flavours of lemon, curry leaves and mustard seeds.

Ingredients

1 cup cooked basmati rice, 2 tbsp oil, a pinch of asafoetida, 1 tsp mustard seeds, 1/2 cup curry leaves, 1 whole red chilli, 1 tsp turmeric powder, 1 tsp salt, 1 tbsp lemon juice, 2 tbsp coriander leaves, 2 tbsp peanuts, 1 tsp urad dal, 1 tsp chana dal, 1/2 tsp ginger

Step 1

Heat oil in a pan, add mustard seeds and let it splutter. Now add asafoetida, curry leaves, ginger, red chilli, chana dal and urad dal. Sauté them well.

Step 2

When the seeds begin to splutter, add peanuts, turmeric powder and rice. Mix well. Add salt and lemon juice to the rice and mix well. Serve hot.
