Medu Vadai is a popular South Indian snack, often served as a breakfast dish or at festive occasions. These crispy, golden fritters made from urad dal (black gram) are soft on the inside and crunchy on the outside.
1 cup urad dal (split black gram) 1-2 green chillies 1/2 inch ginger 1/4 cup leaves 1/4 cup onions 1-2 tbsp rice flour Salt Water Oil
Wash the urad dal thoroughly and soak it in water for 4-6 hours or overnight. Drain the water before grinding.
Grind the soaked urad dal to a smooth, thick batter. Add water little by little to achieve a consistency that is thick enough to hold its shape but not too runny.
Mix in the chopped green chillies, ginger, curry leaves, onions, and salt. Heat oil in a deep frying pan on medium heat. To check if the oil is ready, drop a small portion of batter into the oil. If it rises immediately, the oil is hot enough.
Wet your hands and take a small portion of the batter. Shape it into a round ball, then make a hole in the center with your finger to form a doughnut-like shape.
Carefully drop the vadai into the hot oil. Fry until they turn golden brown and crispy, turning them occasionally to ensure even cooking.
Remove the vadai from the oil and drain excess oil on paper towels. Serve hot with coconut chutney or sambar.
