Tired of regular mithai? The creamy classic kulfi is a rich frozen dessert made from slowly simmered milk, flavoured with cardamom, saffron, and nuts. Its dense, velvety texture and aromatic sweetness make it a timeless favourite bringing indulgent joy to every bite.
1 litre full-fat milk 1/4 cup sugar 1/4 cup condensed milk 1/4 cup chopped nuts (almonds, pistachios) 1/2 tsp cardamom powder
Pour the milk into a heavy-bottomed pan and bring it to a boil.
Lower the heat and simmer, stirring occasionally, until it reduces to about half its original volume.
Add the condensed milk and sugar, stirring continuously until the mixture thickens.
Add cardamom powder, saffron, and nuts, stirring well.
Let the mixture cool, then pour it into kulfi molds or small cups. Freeze for 6-8 hours or until set.
Demould the kulfi and garnish with extra nuts or saffron strands for a festive touch.
