A delicious delicacy that is available in Hong Kong and other areas of Asia is mango pancakes prepared in the unique Hong Kong way. Usually, thin layers of crepe-like pancakes are filled with whipped cream, whole fresh mango pieces, and occasionally other ingredients like custard or mango puree. It is a refreshing summer dessert that you can enjoy for breakfast or as an afternoon or evening snack.

Ingredients

1 cup all-purpose flour 2 eggs 1 cup milk 2 tbsp melted butter 1 tbsp sugar A pinch of salt Oil for cooking 2 ripe mangoes, peeled and sliced Whipped cream Mango puree or custard (optional)

Prepare Pancake Batter

Mix together all-purpose flour, eggs, milk, butter, sugar, and salt to make the pancake batter.

Cook Pancakes

Cook thin pancakes in a greased pan until lightly golden on both sides.

Slice Mangoes

Peel and slice the ripe mangoes.

Layer Ingredients 

Layer the pancakes with whipped cream and mango slices, optionally adding mango puree or custard between layers.
