Homemade Vegetable Soup For The Winters

A sip of piping hot soup during winter is all you need to put yourself back on your feet. Healthy and nutritious, here's how to make this comforting vegetable soup at home.

2 tbsp spring onions, chopped 2 tbsp garlic, minced ½ cup carrots, broccoli, and french beans, chopped ⅔ cup green cabbage, thinly sliced ½ cup sweet corn kernels and green peas ½ tsp salt and ground black pepper ½ tbsp white distilled vinegar 1 tbsp butter and green chillies, chopped 2 tbsp cornstarch 3½ cups water or vegetable stock

Ingredients

In a large stock pot, add the butter and put it on medium-high heat. Add the chopped spring onions, green chillies, and minced garlic and saute for a couple of minutes.

Step 1

Add the carrots, broccoli, and french beans and saute them with the aromatics. Add the thinly sliced cabbage and salt and mix well.

Step 2

Add the water to the pot followed by the corn and peas and season with ground black pepper. Let them simmer for a while.

Step 3

Make a slurry out of the cornstarch and add it to the stock pot. Add the vinegar and stir well.

Step 4

Cook for 10 minutes and once the raw aroma of the vinegar subsides, and the soup is thickened, take it off the heat and serve hot!
