The spiced Gujarati flatbread is a staple delicacy in many Indian homes for its simplicity, portability and long shelf life. Make a batch of theplas to store and enjoy with pickle and yoghurt for a meal, or simply pair with a cup of tea in the evenings.
1 cup whole wheat flour ¼ cup gram flour ¼ cup methi leaves, finely chopped 1 tablespoon oil 1 teaspoon turmeric powder 1 teaspoon red chili powder 1 teaspoon cumin powder 1 teaspoon coriander powder 1 teaspoon ajwain Salt, to taste Water, for kneading
Combine the flours, spices and oil in a mixing bowl and mix thoroughly.
Add the methi leaves and season the mixture with enough salt.
Once combined, gradually pour in the water to knead a soft but firm dough.
Rest for 15-20 minutes before you divide it into equal portions and roll into thin discs.
Cook each circle on a hot pan for 2 minutes on each side and repeat until you have enough.
Serve warm or enjoy at room temperature with condiments of your choice.
