Sohan halwa is a rich, nutty, and caramelised sweet treat that is a winter favourite. This North Indian dessert is famous for its chewy texture, crunchy nuts, and saffron flavour, perfect for celebrations or gifting. With this easy recipe, you can make this luxurious halwa at home.
1 cup sugar ½ cup water ½ cup ghee ¼ cup cornflour 1 cup milk ¼ tsp saffron strands, soaked in 2 tbsp warm milk ¼ tsp cardamom powder ¼ cup chopped almonds ¼ cup chopped pistachios
Mix cornflour with 1 cup milk in a bowl. In a heavy-bottomed pan, combine sugar and water, and cook till it forms a one-string consistency.
Add cornflour mix gradually to the syrup, and stir well to avoid lumps. Add ghee in small portions and stir well so halwa absorbs it.
Mix in saffron milk and cardamom powder, cook till halwa thickens.
Add almonds and pistachios and stir well. Pour in a greased tray and let it set.
