Pasta is one of the few dishes that children all around the world seem to love. But if you’re concerned about using storebought pasta with preservatives, you can easily whip up this semolina pasta at home.

2 cups all-purpose flour 2 cups semolina flour Pinch of salt 6 large eggs 2 tablespoons olive oil

Combine the all-purpose flour, semolina flour, and a pinch of salt by sifting them together in a large bowl.

On a clean surface, create a mound with the flour mixture, forming a deep well in the centre. Break the eggs into the well and add the olive oil.

Gently whisk the eggs with a fork, gradually incorporating the flour from the sides of the well. If the mixture becomes too thick for the fork, switch to kneading with your hands.

Knead the dough for 8 to 12 minutes until it becomes smooth and supple. Dust the dough and work surface with semolina as needed to prevent stickiness.

Wrap the dough tightly in plastic wrap and let it rest at room temperature for 30 minutes. Roll out the dough to your desired thickness using a pasta machine or a rolling pin.

Cut the dough into your preferred style of noodle or use it to make ravioli by adding your favourite filling.

Bring a large pot of lightly salted water to a boil. Cook the pasta until tender yet firm to the bite, usually 1 to 3 minutes (or longer depending on thickness). Drain and add your preferred sauce.
