Homemade Marinated Tofu To Eat In Sandwiches Or Wraps

An interesting vegan spin on the marinated feta, the marinated tofu uses a similar olive oil base to infuse flavours into the plant-based protein. Refrigerate and use this delicious component in sandwiches, wraps or even on a grazing board.

INGREDIENTS

150 grams tofu, cubed ½ cup extra virgin olive oil 1 tablespoon lemon zest 1 tablespoon oregano 1 tablespoon chilli flakes Juice of ½ lemon 1 teaspoon black pepper powder 6 garlic cloves, crushed lightly Salt, to taste

STEP 1

In a sterilised glass jar, combine all the ingredients for the marinade except the tofu.

STEP 2

Mix well before tossing in the cubes and stirring to ensure all of them are evenly coated.

STEP 3

Rest for a couple of hours before using in salads, sandwiches, wraps or even over toast.
