Gujarati Chaas is a refreshing yoghurt-based drink that is a staple beverage in Gujarati cuisine. It has a thin, watery consistency and is flavoured with spices like cumin, mint, coriander and black salt. This homemade version is easy to make and much tastier than store-bought chaas.
2 cups plain yoghurt, whisked until smooth 1 cup of cold water 1/4 teaspoon roasted cumin powder 1/4 teaspoon black salt 1 tablespoon chopped fresh mint leaves 1 tablespoon chopped fresh coriander leaves 1/4 teaspoon red chilly powder (optional) 1 teaspoon sugar or to taste Pinch of asafoetida Ice cubes
In a large bowl, whisk together the yoghurt and water until well combined and smooth.
Add the roasted cumin powder, black salt, mint leaves, coriander leaves, red chilly powder if using, sugar and asafoetida. Whisk it.
Taste and adjust seasoning as needed.
Pour into individual serving glasses and top with a few ice cubes. Garnish with a sprinkle of roasted cumin powder and mint leaves before serving chilled.
