Indulge in these delicious muffins loaded with dry fruits and nuts such as apricots, sultanas, strawberries, walnuts, and almonds. Perfect for a tasty treat!
1 and 1/2 cups all-purpose flour 1 cup of vegetable oil 1 cup of regular sugar 4 large eggs 1 and 1/2 tsp. baking powder 1 and 1/2 cups mixed nuts and dry fruits of your choice 2 tbsp. desiccated coconut 1 tsp. orange zest 1 tsp. vanilla essence
Cut dry fruits and nuts into small pieces. Mix flour with the fruits and nuts to coat them.
Sieve together flour and baking powder, then set aside. Blend sugar and vegetable oil in a big mixing bowl until creamy.
Add eggs one by one. Mix in orange zest and vanilla essence.
Add the dry fruit mixture and desiccated coconut, then mix. Preheat the oven to 180°C for 10 minutes. Line a muffin tray with liners.
Fill 2/3 of each mould with batter. Garnish with additional dry fruits and nuts.
