Having a jar of pickles on hand is great when you’re looking for a light, crunchy snack. These pickles are fresh and crisp, flavoured with the right amount of dill and garlic.
2 cups cucumber spears (cut lengthwise) 1 + ¾ cups water ¾ cup white vinegar 3 cloves garlic 1 bunch fresh dill ½ tablespoon rock salt 2 teaspoons sugar
Stir together the water, vinegar, salt and sugar in a saucepan and bring it to a boil.
Allow the mixture to cool completely.
Meanwhile, arrange the cucumber spears, garlic and dill in a glass jar with a lid.
Pour over the cooled liquid mixture and seal the jar. Refrigerate for three days before consuming.
