Peanut Laddu is a traditional Indian sweet treat made with roasted peanuts and jaggery, creating a deliciously rich and nutty flavour that is beloved during festivals and special occasions.
1 cup of peanuts 3/4 cup jaggery, grated 1 tablespoon ghee 1/2 teaspoon cardamom powder 2 tablespoons grated coconut (optional) A pinch of salt
In a pan, dry roast the peanuts on medium heat until they turn golden. Allow them to cool, then remove the skins.
Grind the roasted peanuts in a blender. Ensure they are not ground into a fine powder.
In the pan, heat the ghee and add the grated jaggery. Stir continuously until the jaggery melts and forms a smooth syrup.
Add the ground peanuts, cardamom powder, grated coconut (if using), and a pinch of salt to the jaggery syrup. Mix well.
Remove the pan from the heat and let the mixture cool slightly.
Grease your hands with ghee, take small portions of the mixture, and roll them into round laddus. Allow them to cool completely and set.
