Homemade Bruschetta To Cool You Down During Summer

While the sun may be high in the sky in some areas of India, the brilliant colours and fresh flavours of this appetiser embody the spirit of the season. 

Ingredients 

Bread   Cherry Tomatoes 1 Cucumber, small diced 3-4 Basil leaves,   Olive Oil   1 Garlic clove Salt to taste Pepper Feta cheese - to crumble on top 

Step 1 

Slice a crusty sourdough, drizzle olive oil and toast them for 3-4 mins or till nicely golden and crunchy 

Step 2 

Iin a bowl, tomatoesadd basil leaves and cucumber in a clean bowl add salt and pepper and some olive oil and a dash of balsamic vinegar and toss them well. 

Step 3  

Now top the crusty bread with this fresh tomato and cucumber salad we prepared.  

Step 4 

Add some feta and enjoy it with some fresh basil on top.
