This homemade avocado sandwich is a quick, hearty snack or breakfast. Filled with a creamy guacamole mixture of ripe avocado, fresh onions, herbs, and spices, it's ready in under 30 minutes.
1 medium to large ripe avocado ¼ to ⅓ cup finely chopped onions 1 tsp finely chopped green chillies or jalapeno 1 garlic clove, minced ½ tsp ground black pepper 2 tsp olive oil (optional) 1-2 tbsp chopped coriander leaves ½ tsp lemon juice Salt as required 8 slices of bread
Cut the avocado in half, remove the seed, and scoop out the pulp into a bowl.
Add the chopped onions, green chillies, coriander, garlic, black pepper, and salt to the bowl.
Mix everything together well and mash the avocado as you mix. Add lemon juice and olive oil (if using) and mix again until smooth.
Spread the guacamole evenly on one side of each bread slice. Place another slice of bread on top and press gently.
Toast the sandwich in a heated pan until golden brown on both sides. Serve warm.
