Andhra Dondakaya Chutney, also known as Dondakaya Pachadi, is a popular chutney made from roasted tindora. It's a flavourful accompaniment to plain rice topped with ghee and can be prepared quickly.
250 grams tindora (dondakaya/kovakkai), sliced into rounds 3 green chillies 6 dry red chillies 20 grams tamarind 1 tsp cumin seeds (jeera) 1 tsp chana dal (Bengal gram dal) 1 tsp white urad dal (split) 1 tbsp roasted peanuts (moongphali)
4 sprigs coriander (dhania) leaves, chopped 4 cloves garlic 3 tbsp oil Salt to taste 1 sprig curry leaves 1/2 tsp mustard seeds (rai/kadugu)
Heat oil in a deep pan over medium heat. Add cumin seeds, urad dal, chana dal, and red chillies.
Sauté for 3 minutes until the dals are browned.
Add chopped tindora pieces and sauté until cooked.
Grind roasted ingredients, tindora, tamarind, salt, green chillies, garlic, and coriander leaves.
Add water as needed to make a smooth chutney. For tempering, heat oil, add mustard seeds, dry red chillies, and curry leaves, then pour over chutney.
