Amritsari Kulcha is one of the most popular flatbreads in India, especially in the Northern region of the country. It is crispy, flaky, and soft loaded with a filling of mashed potatoes and is often served with curries such as chole, rajma, and butter chicken. Here's a recipe to try:
For Dough: 2 cups maida 1/2 cup yoghurt 1/2 tsp baking powder 1/4 tsp baking soda 1 tsp sugar Salt to taste 1-2 tbsp oil
For Stuffing: 2-3 boiled, mashed potatoes 1 small onion 2 green chillies 1-inch ginger 1 tsp cumin seeds 1 tsp coriander powder 1/2 tsp red chilli powder 1/2 tsp garam masala Salt to taste Fresh coriander leaves
Mix all dough ingredients, knead into a soft dough, and let it rest for 2-3 hours.
Mix all stuffing ingredients in a bowl. Divide dough into balls, flatten, add stuffing, seal, and roll into flatbreads.
Cook on a preheated tawa until golden brown on both sides. Optionally, finish on a direct flame for a tandoor effect.
Brush with butter and serve hot with chole, raita, or pickles.
