Palong Shaak er Ghonto is a traditional Bengali mixed vegetable dish with spinach, perfect for a Bengali Khichuri lunch specially in this monsoon. This vegetarian dish, made without onion or garlic, combines eggplant, radish, potato, and spinach, seasoned with Bengali Panch Phoron.

Ingredients

300 grams Spinach 60 grams Potato cubes 60 grams Sweet potato cubes 150 grams Pumpkin cubes 150 grams Brinjal 80 grams Radish 60 grams Broad beans 10 pieces Bori 1 piece Green chili

Ingredients

15 grams Coriander leaves 2 pieces Dried red chilies 2 pieces Bay leaves 1/4 tsp Nigella seed 2 grams Turmeric 1/2 tsp Cumin powder 7 grams Salt 15 grams Sugar Mustard oil (as required)

Step 1

Soak and wash the spinach thoroughly. Steam the spinach and stalks with a pinch of salt.

Step 2

Heat mustard oil in a pan and fry the boris until crispy. Fry the brinjals, then temper with red chilies and bay leaves.

Step 3

Add nigella seeds, potato, pumpkin, radish, and beans; fry for 3 minutes.

Step 4

Add turmeric, cumin, and salt; cover and cook until vegetables are tender.

Step 5

Add steamed spinach, sugar, fried brinjals, bori, chopped coriander, and green chili; cook for 5 more minutes and serve hot with rice.
